This gun doesn't  seem to be different from a standard SP-01 other than the red grips and red extended magazine baseplates. It doesn't even show up on CZ's product page. So what's  the point of this SP01?

Yup. Looks like the standard SP-01 with Red Henning grips and the Henning + 5 base pad and spring follower kit x 2.

One more mag and spring/follower kit and you're on your way to a Carry Optics gun. Just need the slide milled. And an optic. And a lighter hammer and recoil springs at the very least.

Yeah.... I thought that the higher price meant that these red  gripped CZ-75s had some upgraded internals or something. Not just mag extensions and metal grips.
