I recently picked up a FDE P09 worked over by CGW, and while I love the pistol, even more so than my CGW SP-01 Phantom, I can't love the CGW sights. Way too much room around the front sight for me. Which is a pity because they are really high quality sights.
My question is what other sight options are available for the P09/P07? Ideally I would like Truglo to make a run of CZ specific TFO sights. Barring that, are there any steel night sights that fit?

You can order several different sight width and heights from CZ-USA. You can also get whatever you want from Dawson Precision, who supplied the CGW sights.
I understand your sight dilemma. I have the CGW sights on my IDPA game gun P-09. Just right for a game gun, but not for precision, slow target shooting. Before I put a red dot on my original precision P-09, I used the stock rear sight and a solid black wide CZ-USA front sight, then added some JB weld to it to make it even wider to fill the gaps nearly completely. I shot the gun that way initially for bullseye and out to 100 yards with good results. It is still mounted on the gun.
