I'm looking at an LPA adjustable rear sight that's labeled for a SP-01 to put on my CZ 75B. Can anyone confirm that it would fit?

Yes, the SP-01 and 75B share the same rear sight cut. An SP-01 Shadow has a different sight cut, as seen in the picture above.

It would be nice if there were commas in there, because the lpa cut and the shadow factory cut both say 'cz 75 sp-01 shadow'. Which is it?

A stock CZ75 SP-01 Shadow has the "Shadow Factory Cut". They ship with this sight cut from the CZ factory. CZC also offers after market comp sights for this cut.
As i understand it the "LPA Cut" is a non-standerd sight cut done by CZC/Gunsmiths to accommodate the LPA adjustable sights. The above image is something CZC put together and pertains to factory sight cuts as well as other sight cuts they offer on some of their custom builds. It could be more clear but i am happy that it is available.

CZ custom has an adjustable style LPA sight that fits the 75b/sp01. I have the set on my phantom which shares the same sights. I think it was about $100 for the set and makes a huge difference over the tiny stock sights
