I want to swap out the OEM trigger on my phantom for the canik trigger with over travel screw I bought from CGW. are there any vids or tutorials on how to do this?

There's quite a few disassembly and reassembly vids of SP-01 Tacticals on youtube. But not everything is the exact same on a Phantom as a Tactical. I'm sure you could get by though.

Three pins and the entire trigger assembly comes out of the frame. Biggest thing to pay attention to is the trigger return spring which will come flying out when you remove the trigger pin.

Also the phantom trigger pin is larger than the rest of the cz line. CGW has pins and triggers with the correct diameter but you have to make sure they know you are buying the parts for the phantom.
