Have owned probably 50+ 75’s over the years, done work on probably close to 100, there is just something about the feel and shootability of the stainless variety that is different and IMHO “better” than the regular steel, which I also have liked alot! Just one man’s opinion, but based on some extensive time with all varieties of CZ’s, so maybe I’m more attuned to the nuances. It’s really a shame CZ stopped the stainless models, probably forever. The Matte has better feel than the Polished, which is just slick and not as grippy as the Matte. The polished is a looker though.
