I think this video has a good explanation of this. It's pretty much what @Crawl said, CZ75 has locking lugs, most of the polymer guns do their "locking" via the "locking lug" that is the square'y part of the chamber. The former feels much smoother to me. Feels good to know, it was a brain itch of mine, that came back many times right at the time I wanted to go to bed :)

Glad guys could be helpful. Simply put, it sounds like it's a cheaper way to get an accurate pistol, and it uses fewer parts to do so. Since press checking isn't really a useful task to perform, the tradeoff isn't much of a loss.
