How Easy (or Hard) Is It To Remove The Rear Sight On The SP-01?

Do yourself a favor and get a sight pusher. 
Here's the one that I used when I replaced the sights on my SP01 and my TS.  Best $40 I've spent on gun related tools yet

Remove the slide vise it up with leather or plastic jaw covers loosen set screw get some 1/2" wood dowels may need a couple about 6-8" long cause you'll probably crack one. Anyway get a solid bite with the dowel and a decent size hammer 16oz give it a good wack from the right side of the slide like your looking down it right to left and itll come out and wont hurt a thing.
