Accuracy

I stated in an earlier post I am a newbie.  I am down to either the P-01 or P-07.  I expect I will shoot this pistol a fair amount at the range, it will be used for HP and Protection (carried) while fishing certain back woods places.  For accuracy which pistol is or should be expected to be more accurate?   What is considered good to great accuracy for a pistol?  So how would these 2 compare, because I have friends with other pistols and I want to be better ;D

+1 on this.  It's probably the most important thing to consider.  Apart from that...

If you're not an experienced pistolero - both will shoot FAR better than you for a long time.  The P01 has more mass to it making it softer shooting and thus more pleasant to fire; and I'd also venture good chunks of change that your hand will prefer the P01 to the P07 as well.

As much as I like the P07...I probably wouldn't recommend it for you to cut your teeth on.  P01 also has far better aftermarket part support to upgrade it with bling down the road.

I'd just add the PO1 has already been tested and proven to be good. The NATO tests were pretty extreme and demanding and the PO1 has that all under it's belt. That said, could you get a bad one? Sure anything made could just happen to be faulty. The PO7 is just the new kid on the block it might be great, it seemingly is designed (like the PO1) to serve you in the areas that seem to be important to you. Target, HD and carry. I don't think as yet, there are too many folks who have done a side by side as the PO7 pretty new. It's probably a fine gun but fact is it's very new, I've not seen any real reviews as yet. On the other hand, many are very fond of our Hakan (or other custom) grips and it does not seem to offer this option on the PO7. Everyone has different tastes, I think it looks cool and it does have a higher round capacity, it's just a choice you will have to make, I doubt that one is significantly more accurate than the other.
