Does anyone know the difference between the stock hammer and the competition hammer and what the benefits would be?

I'm no expert, new here too, but I think the comp.hammer is lighter and greatly contributes to a much lighter and crisper trigger pull. The comp. hammer is a big part of the "trigger job" that everyone raves about and says, "you gotta do it."

Comp hammer isn't 'lighter'. It has much shorter hooks that come in contact with sear and thus give different feel to trigger pull - short and crisp.
Many people who get comp hammer also replace hammer (aka main) spring to a 'lighter' one and that gives 'lighter' trigger.

The competition hammer has shorter hammer hooks and a slightly different sear engagement angle compared to the factory hammers, giving you a lighter, crisper SA trigger pull with zero creep.  You will need to fit the sear to safety engagement surfaces for the safety to work if you decide to install it on your pistol.

The photo below belongs to Stuart and can be viewed in the link with a lot of other useful pics, I just added the black lines to indicate the hammer hooks used when the hammer is in the full-cock position.
