About to install a cgw kit to a p07, or p09, or possibly both, not sure question for the future.
Do people polish the new cgw hammer before installing, or doe they come already smoothed before finishing,

I would not consider it necessary, probably not even helpful.
However, on my P07 I polished the left side of hammer and lightly sanded the frame since the hammer was rubbing there, creating a stagey DA pull. This would happen with stock hammer as well, a common QC issue with the P series.
Hopefully your P guns don't have that issue.

I wouldn't polish the CGW hammer. The CGW hammers are already super slick.
