Just installed a Deltapoint Pro with the Leupold mount for CZ75 on my Accu Shadow. 

I'm unable to adjust the point of impact high enough.  It's at least 8 inches low at 15 yards.

What am I doing wrong? Do I have the right mount?  or What do I need?

All advice would be appreciated.  Even "do more research before you buy".

The shadow dovetail is different than the 75 dovetail. The difference could be affecting the way the leupold mount sits in the dovetail and your ability to get it to sight in.

you may need to shim it. My Jpoint needed a shim on my M&P to get it into range.
Once the shim was on there .... all zero'd in
make it criminal to own a gun and only criminals will own them

I'm not sure about the dovetail compatibility, but kmanick is correct that some optics require a shim, or two, to get enough elevation adjustment. Getting the optic lower by milling does help to mitigate this, but I just had to add a thin UM Tactical 1 degree Delrin shim to get a Shield RMS to zero on my P-01, even after milling! Check with supplier for optic-specific shims, usually sold separately; or check Amazon.
