Perhaps you tried out a lemon P10 C...?

I do own several CZs including a P10 C. While it is not my favorite, I have found its trigger (and on other P10 Cs that I've shot) to be quite good in comparison to other striker fired pistols. Better than the several P320s I've actually shot. But then in my experience the P320 trigger isn't that impressive to begin with.
I recently purchased an IWI Masada (an affordable pistol to get me started shooting red dots). As I was waiting for the background check at my FFL I noticed they had a P320 X5 Legion behind the counter. I handled it and tried out the trigger and it was objectively worse than the trigger on my "budget" pistol that was less than half the price of the SIG. Even the guy behind the counter concurred the X5 Legion was spongier and had a less pronounced reset. Keep in mind that this is the top-of-the-line factory trigger for the P320...
Also keep in mind that just handling a pistol doesn't always guarantee how well it will shoot. If that were the case I'd own a Walther PPQ and/or an HK VP9. The feel super ergonomic in the hand and have decent triggers (for striker fired pistols). Unfortunately the whirly (lack of) texture on the grips and the heavy slides seem to make them handle recoil less well than a Glock 19, or P10 C, even an M&P 9.
I find the P320 also suffers from this. After all, its basically a striker fired version of the hammer fired DAO P250. In fact I find the small P365 shoots about the same as its larger counterpart.
If I had to own a SIG striker pistol it would probably be the P365. Although, given its heavy frame, the X5 Legion probably shoots much better. And maybe the trigger I tried was also a bit of a lemon. I did notice that with the magazine out and the trigger pressed, that the slide would hang up locked to the rear when racked. I needed to bump it hard to go forward so I could try the trigger reset. Something was rubbing and hanging up in there. Not awesome for a premium SIG Legion with which to "flex on the poors"...
It seems that you are waiting to shoot the P320 before you buy it which is a good thing. Maybe you'll love it or maybe you'll find it was not what you were expecting. It should be interesting for you to shoot it side by side with other similar pistols and let us know what you find.
