I heard back from CZ today! They were nice enough to call, and inform us what they found. The tech who actually worked on the gun is the gent who called and he had our gun in hand as we spoke,  and asked if there was anything else he should know.
Here's the skinny"
The sear looked OK, except for a burr which he ground/polished polished out.
Everything was functioning normally, and he test fired it to be sure.
We'll be receiving back early next week.
He did want to make sure we understood the differences between the 75, and the 75 Omega.

What I inferred from our chat:
The Omega is not in the same quality range as the 75, and we shouldn't expect too much.....

I have to commend CZ for their customer service & attentiveness. They even sent an email every week on the day they received it, just to let us know they hadn't got to it yet, but they knew we were waiting.

MY wife, at the moment, is already thinking "DITCH IT, AND GET A 75B!"  But, we'll, (she'll), wait and see how it works when it arrives.

I'll post again after that.

What’s the reason you chose an omega over the regular 75B? Because if you’re looking to use the safety instead of the decocker you might as well go with the 75B, just my opinion. Easier cleaning and maintenance too. Not that Omegas are all that hard to clean and maintain either, just that a regular 75B is easier. I’m a thumb safety guy myself, no dis to decocker folks.

I say BS on not to expect much from an Omega/P07/P09.

None of the four P07/P09s I've bought showed the issue yours had.

The absolute worst trigger I've bought on a CZ was the two CZ75 Compacts with the P01 style steel frames.  Absolutely ugly trigger pulls.  On par with M&P semi auto triggers, maybe even worse.

In fact, to get triggers better than my P07/P09 I put new hammers in two of my CZ75s (Compact and B model .40).

Bad mouthing the products that provide his job sounds like a good way to end up working somewhere else.
I just keep wasting time and money on other brands trying to find/make one shoot like my P07 and P09.  What is wrong with me?

Without knowing exactly what was said, my thought is the conclusion reached was a step or two farther away from what the tech intended.

The Omega lockwork is less complicated and less expensive to manufacturer, so the Omega model 75B is priced lower than a non-Omega. It doesn't mean less quality, it just means they passed some of the manufacturing cost savings along to the customer.

I've owned my 75B Omega for nearly 6 years and it always performed great.

I love my 2018 CZ75B Omega Convertible# 91136 so much that I bought another one. The 2019 model was nothing like the buttery trigger pull of my 2018 model, so I sold it.
Later I bought the CS75 P-01 Omega Convertible # 91229 and experienced the same crunchy trigger pull and sear hang up problems as Feralcat had on his CZ 75 Omega. This time I sent it back to CZ on their dime for fixing and they did! Now it has a wonderful trigger pull, almost as perfect as my 2018 CZ 75 Omega. But I still prefer my full sized #91136 version due to the recoil and muzzle flip, which is probably due to theP-01’s lighter aluminum frame and shorter barrel.
So now I am selling my P-01 and have bought another full-sized 75B Omega convertible, just because I have two of every gun that I like.
Hopefully the new #91136 will arrive with the same characteristics as my 2018 model. If not, I will be sending it back to CZ for warranty work.

What did CZ have to fix on yours?

The CZ Warranty reply reads...Work Performed: Adjusted fire control components. Function tested and test fired good.

My new #91136 is perfect as far as i can tell, still at my FFL awaiting the three day FBI approval. The dry fire was as smooth and buttery as my 2018 model! Excellent!
