What paarts should I order from Cajun to duplicate a Pro series trigger job.I have a P09 that has the De-cocker removed so its a manual safety cause Im used to 1911.I would like a very smooth DA.Second question with the manual safety can you cock the gun and rest the hammer so your first shot is DA.

YES you can. You have to be sure you know how to do it correctly without hitting firing pin.

These are the parts used in the Pro Grade Upgrade kit.

97098 Pro-Grade Upgrade Kit P-07 P-09
https://cajungunworks.com/product/p-07-p-09-pro-grade-package/

I suggest following this guide.

How to Tune, Smooth and Upgrade the P-07/P-09

Will work for CZ pics! (including but not limited to all CZ clones)

With the hammer cocked it's Single action .
How the trigger comes out all depends on how the gun was to start with.
 don't expect a 1911 smooth trigger I doubt it's going to happen.
Cajun will even tell you that if they worked on 10 - po9's,  7 would usually turn out really good, 2 pretty good and 1 not so good.
Don't polish to the point of removing machine marks on any internal parts , that's not good. 🤬  Believe me , I know ,
I did it myself ,  and threw off the timing.. luckily Cajun sent me a couple of parts to fix the problem.

Only polish to shine.

From the owners manual:
"The safety lever can be set to the SAFE position even with the hammer on the safety notch.  HOWEVER, it is STRONGLY NOT RECOMMENDED that the safety be engaged while in this state as any forced cocking of the hammer or pulling of the trigger could damage the trigger mechanism and cause unwanted firing even though the safety is in the LOCKED (SAFE?) position.  The pistol safety shall only be engaged with the hammer in its rear position,ie COCKED.  The use of safety is therefore convenient for short interruptions of firing only."

If you want to run the P09 with a DA first pull, why not just put in the decocker and use it that way? Also, if you want to "replicate" the CGW Pro package, just get the CGW Pro Package. ;)

JMHO,  some of what they put in those safety manuals is CYA  liability BS.
Not all but some.

I used the MCarbo Trigger Spring kit and followed their online video for component polishing too. Trigger came out nice for both DA and SA. May break into the action again to replace the roller bearing with one from CGW.
