The P-07/09 do exhibit extremely good accuracy but that has much more to do with the barrel lock up. This is not to say the slide rails are not important because they certainly are but having them internal or external has no bearing on the mechanical accuracy of the gun.
None of this is to say the P10S is not accurate the way it's made either as it should be an extremely accurate pistol as well, it's a CZ after all. The P10S is a smaller shorter barreled gun and it does take some additional practice for the user to be accurate with such a gun.

So to summarize (and please correct me where I get it wrong) -
1. The internal slide rail feature of the CZ75 family isn't responsible for the gun's accuracy
2. The barrel lock up of the P07/09 is better than that of the P10 family
I guess I should be comparing the P07 and the P10C as they are more analogous in terms of size.
The P10C will probably have a higher trigger pull and I assume a little less accurate because of the barrel lock up you mentioned, but it does have a slightly longer barrel and I can get one that's optic ready
