I do have a P07 and P01 Omega. I have gone through 3 different P07s since I got into CZ handguns. The first one I let go because I was not thinking. The second one had a horrible DA trigger no matter what I did to it. Now the one I have is great. It did take some work to get it where I wanted it.

As for my P01 Omega, I did a hammer spring change and the trigger is really nice. As for overall shooting though I still prefer the P07. I actually wanted to like the P01 more, but the P07 just works better for me. The trigger reach in DA on the P01 is a little longer which is not good for me. The one major con for me with the P07 is the lack of grip texture on the backstrap. On my P09 I run talon rough texture grips. For my P07, I had the backstrap textured by a company and it is pretty nice.

As for the slipperiness of the P-07 grip when wet, I can see where that would be a problem without some kind of grip enhancement.  I use the rubber Talon grips on mine, which are adequate for me, but I can also see how the sandpaper texture ones could be better.  My gun is normally carried IWB and I wonder about it rubbing excessively with the sandpaper grips.  My rubber grips are holding up alright after 2-3 years now, but if I need to replace them I'd probably try their new Pro texture which is a granulate like sandpaper but made of rubber.

Well, after all considerations I bought 2 guns instead of one. But neither P-01 nor P-07.
I've got two Canics - TP9DA (Walther P99 AS clone) and SC Elite for my wife. $800 for two pistols with all fees and taxes is not bad. For such money I could buy only one P-01 or P-07.
These are my first striker pistols, 2 years ago I could not imagine I will buy strikers, but never say never...

Will test them soon at the range!

I bet those Caniks will serve you well. Crazy that a P07 was going to cost you $800!!! That is just the times I guess these days. I remember back with th P07 was just over $400 and the P01 about $550.

$800 for P01, $600 for P07 (a bit cheaper). But based on feedback people still need to invest to aftermarket parts for P01/P07 and finding standard mags for P07 is problematic.
I live in WA State which recently introduced law to ban sale of mags > 10 rounds, so I wanted to stockpile till July.

My new P-07 is very accurate and ergonomic. Great pistol. That being said, the SA trigger isn’t too good; certainly not as good as others described… A ton of creep to hit an undefined wall, then some crunchiness until the break…. Likely sending it in for some Cajun spice.

I'm also looking for a carry gun for my wife. It might be another gun, but it would be great if we both will love it.
My wife tends to look at miniature guns, but I always tell her than smaller gun means more recoil and worse accuracy.
And she shoots better than me from the large guns like Beretta 92FS or 1911 (9mm). But with smaller polymer like Cm9 Gen2 she struggles with accuracy, while I absolutely enjoy it.
I just ordered and bought a cz p-01 omega convertible online and  it was at my FFL dealer a day before they said it would arrive. I sold another gun so I didn't mind paying a little more to get it . I ordered it from OakHill gun store in PA. I was very pleased with the service I received.  I haven't got to shoot it yet but folks does it feel awesome Iin the hand and the sight picture is great. I have only ever owned striker fired handguns and I am already in love with the DA/SA trigger and the way it functions. It just feels like a more reliable gun to carry I don't know why. I also love the de-cocker/manual safety options and to be able to change it if I want. I would recommend OakHill gun store. They have a couple for sale I believe.
