I purchased the fobus p07 holster and it fits very snug but kinda clicks in and u have to be intentional to get it out but works

That's been my experience with the Fobus also.  It works, but I'm not thrilled with it.  I sure wish Blackhawk! made a Serpa CQC for this gun!

Will holstering a plastic gun like the P09 see its finished ruined or is it fine because its not metal? My buddy says that a leather holster will  be much easier on the finish.

Google pictures of polymer guns that have been in and out of holsters for years. The polymer doesn't see as much wear as the steel frame does.

Nope, the plastic "finish" isn't ruined by holster wear, might get a little scuffed up over the years. You'll see the slide edges wear off far faster than anything, esepcially if carried in a plastic rig - our issue Glocks all have bare metal showing after 15 years in and out of Fobus rigs.

Our G-rocks are over 15 years old, and ready for scrapping, unfortunately. The Tenifier finish worked quite well, and for normal use, would have lasted a very long time. Under OUR abuse...not so much. :'(

I must be missing something because when I look at the site and do a "Search by Gun" I see the P-07, but not the P-09. Where would I find this?

This is one I did myself.  I also put adhesive backed suede on the inside where the gun rides for protection.  Might be overkill but why not?
