Will most likely try them in parallel at my local range before making my final call

I forgot that one and don't know why because it is very wise advice - rent or borrow pistols you are considering and shoot them. Those "test drives" see the best possible thing to do.  What feels good statically may not perform well in live fire, and vice versa.  Renting and test shooting will allow you to make the best choice and save you a lot of money.

P-09 lead me to more P-09's, and P-09's lead me to P-07 which was even more perfect a feel in hand which lead me to multiple P-07's...

I learn slow.

I'm at 5 P-09's, and 3 P-07's.....

Guess I'm stuck.

If CZ ever makes a gun with a slide the length of the P-09 and a grip the length of a P-07, I'd probably buy a dozen ;-)

Unfortunately, you're probably gonna have to buy all three. Then the P-10C when available. Then also the standard P-10 to have the pair when it comes out. It never ends.

Take a look at these videos and see what can be done with the compact P-07.   It is not very far behind the P-09 at all.  I was pleasantly surprised myself.

I found a video of a range trip when I shot my P-09 and P-07 on the same day, same conditions, at 100 yards.  not the best groups I've shot, but a good comparison.

(I've shot a 3-1/4" group with that P-09 at 100 yards.  Once.  Yes, it was a fluke.  But I have maybe 6 targets under 6" at 100 yards with the gun.  The gun is no fluke.)

If you're never going to concealed carry it, I'd opt for the P-09.  I have both and really, both are great.

I like the feel of and shoot my P-09 better.

As you stated the P-09 is les expensive, but in time you would be able to configure(Cajunize)it to your liking.

If one installs the firing pin and springs it isn't that much.

Vote for P09 here.  All I have invested for upgrades is what it cost for a sheet of 400gr and 2000gr sandpaper.

Don't know if the P07s have more trigger problems as evidenced by all the posts here vs the P09 or more people buy em.
