All four targets are correct.
If hole breaks the higher scoring ring it counts. If hole from some bullets is smaller then the bullet diameter like it happens often with JHP or Round nosed bullets, scoring overlay is used to find the original hole diameter.

This is getting a bit more complicated.  Based on what you can tell in the pics how would you score these targets?

Some of them are close enough where I would have needed an overlay, but from the photos I would score them exactly as you did.

Ditto.  That second target I could only see 9 holes on my tiny phone screen,  but I assume another x ring double.

First target needs overlay for 10 o'clock 9.
6 o'clock holes - one is clearly 9, the second is 8, but at scorers discretion. 6x

The second target is likely 98 and 2 or 3 x

Rules are here http://compete.nra.org/documents/pdf/compete/RuleBooks/Pistol/pistol-book.pdf Look for the chapter 14 and 14.9

Benefits of the doubt awarded to shooter.

Your SWC loads make scoring much easier than the JHP I use!  I use the overlay often.  Boris has covered everything you asked.

I shot the match this morning with 9mm and Hornady HAP 125gr bullets. Some holes did have to be scored with overlay. One was just a little larger 10 ring hole that considered as a double without clearly visible elongation. Benefits of the doubt was to my advantage. No clean targets today, but some very tight groups (connected clusters) that was wayed, but stray 9 or 8 shots spoiled them. Many 97-98s on the short line, but I most proud of 95 SF (50yd).

Congrats on the 95 slow fire, Boris!  I have one slow fire 95 target from a practice session, but only a 93 in a match.  And not enough of those.   But I'm heading to the shooting range this morning to practice.

How do you score this shot that hit in the mud 2 feet from the target?

This is a tough one. Some score them zero, some as a miss. I put "-" on the score card. Congrats on the small saving of the repair paster cost. 8)
