What's it gonna be?   Ham or Turkey at Ten Paces?  Armoredman's gotta be tired of Ham by now.   And I'm burned out on Turkey.  Maybe some Enchiladas???  New Mexican Style??  I'm leaning towards some good Enchiladas myself.  Been dieting for the last four months and its time for something Tasty.  Anybody got a New Recipe for Enchiladas..I know it's early..but lets get ready to PARTY ! !!    Happy New Year to All !

Stastny Novy Rok! (Happy New Year in Czech).  Being a Westerner and spending nearly 20 years in South Texas I truly believe that enchiladas are one of God's gifts to Man!

Here's how we do it:

1 lb of lean ground beef
1/4 onion chopped
3 small Jalapenos or 2 small serranos
1 package of corn tortillas
1 can of Hatch's enchillada sauce
1 package of shredded Mexican style white cheese

Brown the ground beef add the onions and continue cooking until the onions are tender.  Chop the peppers and cook another couple of minutes.

In a dry frying pan, heat the tortillas through until they're soft and tender.  

Take a tortilla and place a tablespoon or so of the meat mixture in the center and roll it up. Take the rolled tortilla and place it in a baking dish.  Repeat until all of the beef mixture is used up.

Cover your pan full of enchiladas with the Hatch's enchilada sauce, sprinkle on the cheese, and put into the oven for 10-15 minutes at 350 degrees or until the cheese is melted.

We like to serve our enchiladas with a little tossed salad and maybe a small portion of refried beans!

Hey thanks ONS!  Sounds good already.  Hope I can come up with some Hatch's sauce.  Had a buddy that used to get Hatch Chiles delivered to him over here in South Texas.  I'm gonna try and search some out.    Thanks for the recipe and   Happy New Year back at ya.....!!

Dos, had a ham and hamburger relish sandwich for luch about 2 hours ago - love good glazed ham!:rollin  I won't get any more until next Christmas, so I enjoy it now! Need larger pants, though, don't know why....:eek

Heh Heh Armoredman....I understand about the pants size thing...I went out the day after Christmas and bought a Spiral Sliced Honey Cured Ham....HEAVENLY ! !   Gosh, I only splurge on stuff like that once a year so  me, the wife, and our two teen daughers enjoyed it immensely. (I ate most of it..heh heh)   People always thought I was crazy coz I like my Ham Cold, along with Deli Rye and thinly sliced Swiss and of course a good crisp German Lager.   That's what I live for....if I did it every day, they'd have to remove me from the house with a Chain Saw. :)   Haven't had the Enchiladas yet and  ONS if yoiu're listening, I'll be tryin out your recipe real soon.  Where were you for twenty years in South Texas?  Also, ONS, some people I've talked to round here say they dip the tortillas in hot oil momentarily befofe rollin' em up....what say you good buddy??  I really am lookin forward to some good Enchiladas before I get back on a respectable healthy diet of sort.  Take care.  Yee Haw...gonna be a New Year all Year Long !!  Crazy; but True...

If you fry up your torillas in hot oil right before use, yes, they are good!
   Think I'll have a ham sandwich now....still have two foil wrapped packages of leftovers in the freezer!8)

Hey i was reading the enchilada recipe that Otto placed are very different that how enchiladas are in my country, hmm it have to be a mexican style it sounds like a taco here, well i will try it coz it sound so good!!! by the way here at my country at christmas or new year eve we eat turkey or "tamales" have a great new year people and i hope all your dreams become true!!! for you and your families!!
