Wouldn’t the 10mm be too long for the grip?
Yes, there are (very generally speaking) long and short series pistol cartridges. That's why the 1911's weren't offered in 9mm for the longest time. The 1911 was originally a long cartridge mechanism, which can be easily adapted to 45ACP, 38Super, 10mmAuto, 9x21, 9x23, etc.
Guns designed around the 9x19 Luger can only physically handle the shorter series of cartridges... 380Auto, 357SIG, 40S&W, etc. Of course these shorter cartridges also have correspondingly lower energy levels and are not nearly as physically robust in design.
So size and power wise, 10mmAuto might work in a CZ 97, but not in a P10 or CZ75 series gun.
