CZ 75 Extractors

Are there any meaningful differences between CZ 75 (9mm) extractors, other than price? 

CZ factory
Cajun Gun Works
Eemann Tech
other?

At this point in time, I think it boils down to who has parts in stock!

This I think is it. There's really no advantage to any other brand since the CZ extractor is not really a point of issue with the guns. They can fail but one won't out perform another.

Regarding the parts availability, is this normal for many of the CZ 75 parts to be out of stock everywhere?  I've only been looking at CZ 75 parts for the last 6-9 months, so I was wondering if this is normal, or if something else is going on.

Hard to say if availability is worse...if the part I want is in stock then no problem...CZ-USA seems to get parts in large batches so can be hit or miss and after market manufacturers usually fill the gaps.

Cajun and Dot 40 both show extractors in stock at this time.

Cz is not the only company experiencing shortages. I've had problems finding parts/accessories for my Berettas as well. There's still many companies of all kinds still playing catch up after the plandemic.
