Can I just buy a standard SP-01 and turn it into a shadow?
I'm not sure if I can swing a Shadow right now so I was thinking about getting a sp-01 now and having the shadow treatment done to it later if that's possible.

You can buy a SP01 and pull the firing pin block, respring it, add the competition hammer, and polish the insides for what will result in a dang sweet shooting SP01, but it won't be a Shadow.

Shadows don't have the cut in the slide for the firing pin block, and thus have no firing pin block lifter, which makes for a much shorter trigger reset. 

Are you looking for a great gun, or a great gun that will qualify for certain classes of IPSC/USPSA?  That's the real determiner...

Yep I'm looking for something I can use for IDPA/USPSA. If I have to leave the firing pin block in I might as well get the tactical model I found locally for $545 and have the work done on it or just keep saving for the shadow.

Just keep saving for the Shadow..it will be well worth it.
for the games..it is that much better than anything else

You can't remove the firing pn block for either USPSA or IDPA.  If you go the Shadow route you will have to change the grips to Dennis Marschal grips that weight .4oz and get 10 round mags to make weight for IDPA.  You have to get the gun down to 39oz.  It weighs 40.1 oz out of the box.  The Shadow is legal for USPSA Production out of the box.

If you weigh the gun in with 10 round mags can you still use the 19 round mags in the match?

No, you still have to use the 10 round mags for IDPA, but you're limited to 10 rounds in the magazine anyway (barney mag not withstanding which kinda sucks).
