Other than the CZ 85, which CZ pistols have ambi controls (mag release, safety, and slide release)?

The 9mm 75B SA, and all .40 versions of the 75B (both full-size and compact, SA or DA/SA models)  have ambi safeties.

The newer models based on the P-01 slide should also have reversible mag releases.

Thanks but to my knowledge the 75B does not have an ambi slide release (compared to the 85).

My standard for a pistol is that I must be able to manipulate all controls without compromising my grip.

Your knowledge is not complete...

The 75B SA (single action) in both 9mm and .40 has an ambi safety.  The mag release is not reversible.

The 75B Compact in .40 S&W has an ambi-safety.  The mag release may be reversible.  
 
The 85B and the 85 Combat have ambi-safeties and slide releases, but the mag release is not reversible.

The 85B Compact in .40, (a limited-production gun, superceded by the 75B Compact in .40, is identical to the 75B Compact in .40.)   Ambi safety; mag release may be reversible.

The standard 75B in 9mm does not have any ambi controls.  The mag release is not reversible.

The the 75BD (decocker version) in 9mm or .40 does not have ambi controls.  The mag release is not reversible.

The 75B DAO (in 9mm and .40) does not have a reversible mag release.

Note: A lot of folks can't work the mag release on any gun without changing their grip...
